Cioppino! Italian seafood tomato soup.
What you need (2 pax):
3-6 cloves of garlic (I used more)
Cherry tomatoes (normal ones are good too, entirely optional)
Tomato paste (small canned one. Can use diced, crushed, whole canned tomato)
1 yellow onion Hot pepper flakes (to your liking)
Italian herbs & parsley Seafood (I used mackerel, shrimps, squid - can use crab, mussels, clams, etc)
Soup stock (I used shrimp shell & boil in water. Drain the shell away to get the stock)
Salt & pepper
Instructions:
1. Heat pan with olive oil & throw in the onions. Cook till tender. Add in herbs, garlic & cherry tomato.
2. Add in tomato paste & mix in your soup stock. Bring it to a boil.
3. Add your seafood accordingly (they cook at different rate).
4. Once your seafood cook, salt & pepper to taste.
5. Ladle to a bowl, garnish with finely chopped parsley and serve with crunchy garlic bread.
